Wirsing similar to that served at Brauerei Sion in Koln

Wirsing (kale)

Wirsing (kale)

* One head of dark curly kale, rinsed, stems discarded, and leaves chopped finely
* One medium onion, chopped finely
* One dessert spoon of cooking oil
* One kilo of mealy potatoes
* 150 grams butter
* 250 grams sahne
* 250 grams kaase, coarsely grated
* salt and pepper to taste

Directions

* Saute kale and onion in oil until soft. Set aside.

* Boil potatoes until tender when tested with a knife point; drain, peel, and place in large bowl (if overboiled, return peeled potatoes to empty pot and dry-cook to remove excess moisture, then place in large bowl).

* Mash potatoes coarsely; stir in sauteed kale and onion.

* Continue mashing potato/veg mixture, adding butter, sahne, and kaase all at several intervals to loosen the mixture.

* Then mash to a smooth puree.

* Taste and add salt and pepper as desired.

Hi Rita,
I hope you try the recipe and enjoy it as much as I do. When my son and I ate at Sion both our plates came with Wirsing. He had an aversion to veg, so I traded him my wurst for his Wirsing and I think I got the better end of the deal. I'm a private chef and worked on developing this recipe until it matched Sion's. Emmenthal or young Gouda are good kaase choices; cheddar, brie, chevre, or bleu would also be good, but wouldn't taste the same as Sion's. Köstlich!

Hi Aimee,

Thanks for the additional info about the cheese. When I told my husband about the recipe, I got a weird look. I reckon, I will end up trading the sausage with him as well when I cook it :).
I will defintely try the recipe soon, as it is exactly what I love, veggies and potatoes.

Kale or Savoy cabbage?

I have a question about the wirsing...the picture you show is savoy cabbage.. I had kale before and it looks different.... so are you using kale or savoy cabbage... Thanks for answering back.

Hi Pat,

You are right, Wirsing is savoy cabbage, not kale.
I would definitely use savoy cabbage for the recipe.
